Ingredients:
- 1 lb shrimp, peeled and deveined
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 avocado, mashed
- 1/4 cup mayonnaise
- 1 chipotle pepper in adobo sauce, minced
- Juice of 1 lime
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 4 sandwich buns, toasted
- Lettuce leaves, for serving
- Tomato slices, for serving
- Red onion slices, for serving
Instructions:
Put shrimp in a bowl and season them with salt, pepper, and olive oil
Warm up a pan over medium-high heat
Cook the shrimp for two to three minutes on each side, or until they are pink and done
Chop chipotle pepper, mayonnaise, lime juice, garlic powder, and paprika and mix them in a different bowl
This will make chipotle avocado mayonnaise
Put chipotle avocado mayonnaise on buns that have been toasted
Put cooked shrimp, lettuce leaves, tomato slices, and red onion slices on top
Put the other half of the toasted bun on top and serve
